What operators usually get asked
- HFD LSB Standard 02 §2.9.1: commercial kitchen vent hood fire suppression must be inspected and service-tagged at least every 6 months (and after any activation) by an approved fire protection equipment company; systems must meet UL 300 (as cited in the standard).
- Same section: vent hoods, exhaust ducts, fans, and appurtenances shall be cleaned and inspected by approved personnel as often as necessary to insure against excess grease. The public LSB text does not reprint a fixed monthly/quarterly grease-cleaning table — confirm cadence with the HFD Fire Marshal for your cooking volume.
- HFD hotel/motel inspection guide checklist items include hood systems free of grease/oil and suppression tagged every 6 months — a useful signal for what inspectors look at on cooking occupancies.

- Certs your AHJ accepts (IKECA or local equivalent) — ask, then verify
- Certificate of insurance before they arrive
- Photo report: plenum, ducts, rooftop fan — not only the canopy
- Full-system vs canopy wipe in writing
- After-hours and roof access confirmed before the crew shows up
