What operators usually get asked
- Chicago Municipal Code 18-28-507: Type I or Type II hoods over commercial food heat-processing appliances; Type I where grease vapors or smoke are produced; solid-fuel Type I hoods discharge to an independent exhaust system.
- Mobile food / shared-kitchen rules define NFPA 96, require automatic suppression maintained per NFPA 96, and state semi-annual hood inspection by a licensed HVAC professional for certain mobile setups. That mobile rule is not automatically the brick-and-mortar cadence — verify fixed restaurants with CFD Fire Prevention.
- Kitchen hoods may need Air Pollution Control permitting (Form FP) when regulated — separate from grease cleaning.

- Certs your AHJ accepts (IKECA or local equivalent) — ask, then verify
- Certificate of insurance before they arrive
- Photo report: plenum, ducts, rooftop fan — not only the canopy
- Full-system vs canopy wipe in writing
- After-hours and roof access confirmed before the crew shows up
